It's one of the simplest recipes I know. Just grill your favorite bread on both sides for a while with a little butter in the frying pan, cut a hole in the bread, crack an egg into the hole, add salt and pepper, and cook until the yolk is done to your liking, flipping once.
As simple as it is, I thought this might be the perfect breakfast to make on a day like today...the day that I share with you that there's an egg in my nest! Translation: I'm pregnant!
I'm onto my 15th week of pregnancy, which officially puts me out of my nausea-filled first trimester and into the much welcomed second trimester. The egg is now the size of an orange and I'm waiting for the day when I start to get a little more round myself because right now I just look like I've been drinking too much beer and have the gut to show for it. (And no, I haven't been drinking beer or any other fun libation while pregnant.)
Our little one is due September 20th and Ian and I cannot wait to meet him or her. (And in case you're wondering...we are going to find out the sex of the baby but we have to wait a few more weeks for that.)
I'm thinking that much of my blogging from here on out will be related to my experience as a first time expectant mom. I invite you all to offer up your thoughts, memories, and advice about motherhood as I continue on this brand new journey.
